Creamy Chicken Waldorf Salad
Janet is the matriarch of the Barton Family. She’s been married to Jerry for 53 years and has lived on the Barton Ranch for nearly fifty years. She’s also a wonderful cook, and she shares here one of her favorite summertime recipes for a light, one-dish meal; featuring (of course) GoldRiver Orchards Walnuts.


Salad
8 oz. baby peas
3 cups diced cooked chicken
2 large Fuji apples, cored and diced, unpeeled
2 cups seedless red grapes
3 stalks celery, diced
1/2 cup coarsely chopped GoldRiver Orchards Walnuts

Dressing
1 cup plain low-fat yogurt
2/3 cup buttermilk
2 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon snipped fresh dill (or 1/2 teaspoon dill weed)
1/8 teaspoon salt
1/8 teaspoon pepper

Toast walnuts, set aside until cool. Mix first five ingredients with dressing. Place on bed of field greens. Top with GoldRiver Orchards Walnuts.
For four adults, make 1 1/2 recipes. One recipe of dressing is enough.

This salad makes an excellent summer luncheon one-dish meal.
